Job Summary
Responsible for all food production including that used for locations, banquet function and other outlets as may be required. Develop menus, costing food purchase specifications and recipes. Supervise the staff. Develop and monitor food and labour budget for the department. Maintain highest professional food quality and sanitation standards. Train staff; follow the policy and regulations from the local Authorities as well as internal policy and procedures.
Duties & Responsibilities:
- Plan menus, costing and testing for all.
- Schedule and coordinates the work of chefs, cooks, and other kitchen employees to assure that food preparation is as per the recipe cost and methods.
- Approves the application of products and other necessary food supplies.
- Coordinate with the Hygiene Officer & ensures that high standards of sanitation, cleanliness and safety are maintained throughout all kitchen areas at all times and as per the Local Authorities and HACCP requirements. If such standards are not endorsed, any fines resulting from inspections will be charged directly to your account (Salary).
- Establish controls to minimize food and supply, waste & theft.
- Safeguard all food preparation employees by implementing training to increase their knowledge about safety, sanitation and accident prevention principles.
- Develop standard recipes and techniques for food preparation and presentation which help to assure consistently high quality and to minimize food costs; not exceeding more than 35% ; implement portion control for all items served and assists in establishing menu selling prices.
- Prepare necessary data for applicable parts of budget; projects annual food, labour and other costs are monitor actual financial results; take corrective action as necessary to help assure that financial goals are met.
- Attend staff and management meetings and conduct meetings when required.
- Consult with General Manager or OP Manager & F&B Manager about food production aspects of special events being planned.
- Cook or directly supervise the cooking of all items that require skillful preparation.
- Ensure proper staffing for maximum productivity and high standards of quality; control food and payroll costs to achieve maximum profitability.
- Daily briefing for all the production staff prior to work timing and conduct weekly meeting for the same.
- Implement and Follow up with the tested and approved RCP.
- Implement and follow up daily records as per HACCP inquiries with the coordination of Hygiene Officer.
- Maintain the required stock level for 1 week operation with the coordination of store in-charge.
- Elevate food products to assure that quality standards are continuously attained.
- Interact with management to assure that food production consistently exceeds the expectations of members and guests.
- Elevates products to assure quality, prices are consistently met.
- Develop policies and procedures to enhance & measure quality; continuously update policies and procedures to reflect state of art techniques, equipment & terminology.
- Establish and maintain a regular cleaning and maintenance schedule for all kitchen areas & equipment.
- Provide training and professional development opportunities for all kitchen staff.
- Periodically conduct visits to our sites & locations.
- Perform other duties as may be required.
- Weekend work and overtime hours may sometimes be required to meet customer demands.
- Have to perform PIC & observe food hygiene standard and practice at all times.
Education & Qualification:
- Must have undergone HACCP Level – 3 training and passed the exam with certificate proof.
- Must have computer knowledge and able to communicate in English (Read/Write/Speak).
- Must be able to multi-task and work well under pressure, as working on multiple projects with regular interruptions is typical.
- Candidate must be accurate to desired standards of performance and possess problem-solving capabilities.
- Relevant degree from a recognized university.
Salary: AED10,000.00 /month
